Egg Roast




Egg Roast:
Eggs-6 boiled w/cuts on them, so masala gets well coated
Onions- 3 finely sliced
Green Chili- 1 or more cut into few pcs
Ginger- 1 inch finely crushed
Garlic- 3 cloves crushed
Tomato- 1 med size finely chopped
Coriander leaves for garnishing
Cocount oil(2 Tbspns) & Curry leaves( 1 sprig)
Salt to taste
Powders:
Coriander – 2 Tspn
Cumin (jeera) ½ Tspn
Red Chili – 1Tspn
Turmeric- ¼ Tspn
Garam Masala- ¼ Tspn
Pepper- ¼ Tspn

Method:
In a pan, pour coconut oil and slightly fry the onions on medium low fire. Once they turn soft, add ginger, garlic, curry leaves and all the powders followed by tomato. Fry for 2 to 3 minutes more till it forms a nice masala paste. Add eggs and let it coat well with the masala.
Add ½ cup of water and salt and cook till the gravy thickens
Garnish with coriander leaves

Crèpes



Ingredients:
a) All Purpose Flour- 1 cup
b) Eggs- 4
c) Whole Milk (full fat ) 1 1/2 cup
d) Unsalted butter- 3 Tbspn
e) Salt- ½ Tspn
f) Sugar- 1 Tbpsn
g) Vanilla essence- Couple of drops
h) Fruits - as per your liking
i) Nuts-0 a few
j) Nutella, peanut butter spread
k) Syrup- (any flavor such chocolate, caramel. Mabel raspberry…)
l) Ice cream- optional

Method:
In a mixer, mix ingredients “a to g”. Leave it for 15minutes. Meanwhile, prepare the ingredients “h to l”. In a non-stick pan, pour 1/4 cup batter (mixed ingredients) and run the batter around the pan to make thin crêpes. Turn and apply the spread of Nutella/Peanut butter… in the pan itself. Take the crepe and place it on the plate and serve as u see in the picture with your favourite fruits and toppings.

Garlic Pepper Prawns

Ingredients:

Prawns- 250gms with tail on
Olive Oil- 2 Tbpsns & a small cube of butter  
Onion- 1 finely chopped
Garlic- 6 to 7 cloves finely chopped or grated
Ginger ½ inch pc- finely chopped or grated
Green Chili- 3 to 4 pcs finely chopped
Black Pepper- 1 Tspn crushed- Use ¼ Tspn of it for garnishing
Salt- As per your taste. Suggest very little
Red Bell pepper- 1 small slit into thin strips
Spring onion- 1 chop them and separate the white and green
Soya Sauce- 1 Tbspn
Tomato Ketchup- 3 to 4 Tspns diluted in water
Chili sauce- any of your choice- 1 Tspn
Vinegar- 1 Tspn
Corn starch- 1 Tbspn
Parsley- fresh- 3 Tbspns chopped ( a Tspn out of this to top on ur final dish)
Rum- 1 Tbspn ( optional- if ur in that mood J)

Method:

In a non-stick heavy bottom vessel & in medium flame, pour olive oil and the butter, toss the onions, garlic & ginger. Once they turn brown, add the green chili, red bell pepper, white of the spring onions & ¾ of the crushed pepper
Add soya sauce/ketchup/chili sauce one after the other followed by the Vinegar. Add the cornstarch, so it will bind and make a thick sauce. Add salt.
You may add little water to maintain the consistency you need.
Add the prawns. Mix well and cook it for a while.  Add the spring onion greens and the parsley.

When done, sprinkle a bit of spring onions and crushed pepper.
